This Festive Bikini – How to Make It
WHere is a simplified interpretation of a cocktail from a new drinks list. This is a batch pre-mixed that is bursting with tastes of the festive period, which makes it excellent for your festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, desserts, or to make more rounds of the drink.

Yields 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Combine every items in a pot, bring to a light boil, mixing to dissolve. After that, remove from the stove and leave to cool fully. Decant into a sterilised bottle, seal keeping it in the fridge, where it will keep for about one month.
To make Batch Mix: Mix the specified liquids into a big jug, leave to sit for an hour, then strain best through cheesecloth, to ensure it's completely strained.
When ready to serve: Pour 85ml of your batch mix to a stirring glass filled with ice, and agitate gently for one minute to cool it down. Filter to a cold coupe glass or equivalent, decorate with a few cranberries and complete it using a light spray of the essential oil above the glass.
